I don't remember who posted this recipe on the Nutrisystem site (if you know, tell me so I can give due credit), but it's been taste-tested by me personally and passed with flying colors!

Ingredients:

4 cups skim milk
1 small pkg sugar-free inst. vanilla pudding
1 cup Egg Beaters
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg

Directions:

In med. bowl, mix 2 cups of milk and pudding mix until starting to thicken. Then add the remaining 2 cups milk, Egg Beaters, vanilla and nutmeg. Mix until well blended. Best if refrigerated for a few hours.

Totals 500 calories, No fat, 56 gm protein. Yields 5 - 1 cup servings, each would be 100 calories and 11 gm protein, easily qualifying as a protein serving.
